Scamorza is a stretched-curd cheese, white, firm, buttery, and free of holes. The flavor, if the cheese has been smoked, is more pronounced, with a slightly pungent and acidic, pleasant aroma and flavor. The name "Scamorza" almost certainly derives from the verb "scamozzare," which means to pollard, meaning to remove a small portion of the top. Indeed, the original shape resembles that of a decapitated cheese.
