Description
Cotechino (pork sausage stuffed in casing) is prepared by mincing the pork meat in a mincer. Trimming can be performed before this process, when required. The mixture thus obtained is stuffed into a casing and then packed in aluminum bags. The product is then precooked under vacuum or at atmospheric pressure. Cotechino 100% Italian Meat has a soft texture and an unmistakably pronounced aroma.
