Description
Pennette Rigate belong to the Penne family and differ in diameter. In Italian, the term "Penne" refers to the quill pen, once used for writing, which was cut on an angle to achieve a fine point. The shape, obtained from a smooth or ridged pasta tube of varying lengths, features the characteristic diagonal cut typical of a writing pen. Penne are one of the few pasta shapes with a certain birth date: in 1865, a pasta maker from San Martino d'Albaro (Genoa), Giovanni Battista Capurro, applied for and obtained a patent for a diagonal cutting machine. The patent was important because it allowed fresh pasta to be cut into a quill shape without flattening it, in lengths ranging from 3 to 5 centimeters (mezze penne or penne). The document kept at the Central Archives of the State of Rome states: “ Until now, the diagonal cut could only be obtained with hand scissors, a method which, in addition to being too slow and expensive, had the disadvantage of producing an irregular cut and flattening the pasta .” Pennette Rigate are excellent for preparing dry pasta dishes seasoned with beef or pork ragù. They also adapt perfectly to vegetable-based sauces such as aubergines, peppers, courgettes and artichokes or to more imaginative recipes with salmon or vodka. Available in 500 g packs.
