Garganelli were traditionally made by rolling small squares of pasta dough around a wooden stick, which were then passed over a weaving comb to create the characteristic ridges. Barilla has revived this tradition by reintroducing Garganelli Barilla Emiliane: thin curls of rough, porous egg pasta rolled to leave pointed, slanted ends.
